Fungus chitosan is extracted from fungi plants, such as mushroom and aspergillus niger. It can be obtained by deacetylating chitin. Under conditions of 100°C and 40% NaOH, when chitin is treated, a deacetylation reaction takes place, obtaining chitosan.
